Fennel seeds have a tasty, licorice-like flavor. They were used in Ancient times and cultivated by the Romans. Today, fennel seeds are grown and used throughout the world.

Fennel seeds are known for relieving digestive stomach upsets and gas pain. The seeds can be an aid to reduce hunger. They can be effective in treating coughs, sore throats, and respiratory ailments. Place soaked fennel tea bags on eyes to relieve redness and swelling. Chew Fennel Seeds raw for a mouth freshener. Historically, fennel seeds help promote milk production (lactation) in nursing mothers. As a weakend herbal tea, it is safe enough for colicky babies and toddlers.

For cooking, you can bring out flavors by heating in dry frying pan for a couple of minutes until you smell the fragrance. Use whole fennel seeds or ground them up with a mortar and pestle or an electric coffee grinder. Try adding it to tuna fish salad. Add to bread making recipe, vegetable dishes, and much more.

Fenugreek seeds have a slightly nutty, maple, curry-like flavor. Originating in the Mediterranean region and Asia, Fenugreek is one of the oldest herbs known. Its seeds were highly praised for their beneficial uses in ancient Egypt and India and later among the Greeks and Romans. Fennel seeds were once used to produce a natural yellow dye for coloring wool.

Fenugreek seeds have a great deal of beneficial health uses due partly to it's very high mucilage content. As a tea, the seeds are especially useful for lactating women to aid in milk production.

Common uses of Fenugreek today are culinary: Gives a maple flavor for confectioneries, an ingredient of curry powders, and as an enhancement for meats, poultry, and marinated vegetables. Fenugreek seeds can also be sprouted and eaten raw as a healthy vegetarian food.

Flax seeds are the brown variety and have an earthy and slightly nutty taste. They have an abundance of omega-3 fatty acids which makes them a healthy addition to your meals. They can be eaten whole or ground for even easier digestion.

You can bake most anything and add a few flax seeds. You can sprinkle flax seeds on salads, soups, or even your morning cereal. Add to most any vegetable or meat dish for the added nutrients.

Flax seeds can also be used for crafting projects such as eye pillows, doll stuffing, added to potpourri, or any creative endeavor.

Sesame Seeds can be slightly browned or cooked with other ingredients. Nice crunchy texture. One of the oldest seeds known to man. Sesame Seeds are used extensively in Mediterranean, Middle Eastern, Greek and Asian cuisine. Sesame Seeds when ground can be made into tehina paste and halva. Add to cookie, pastry, and cake recipes and tasty as a main ingredient in candy. Throw some over vegetables or top a casserole or baked chicken with Sesame Seeds before baking.

To lightly toast, just heat a frying pan without any oil or butter. Put in the sesame seeds keeping it one layer. Stand by and holding the pan handle, move it around to shake and spread out the Sesame Seeds every few seconds or so. Continue until you get a nice light brown color without overcooking.

Sesame Seeds are also great when mixed with cumin and coriander spices.

Anise Seeds have a licorice type flavor. One of the older seeds used since ancient times (over 4000 years). Anise Seeds are used extensively in Mediterranean, Middle Eastern, Greek and Italian cuisine. It is also used in the making of liquors such as the Greek ouzo and Turkish Raki.

It is historically used to aid digestion and acts as a natural antacid (use instead of Tums. Similarly to fennel seeds, you can chew Anise Seeds after a meal to freshen your breath. Safe enough for young children, as a tea it helps with colic and flatulence. Anise Seed Herbal tea (bruise the seeds a bit) can also be used to treat coughs and sore throats.

Anise seeds add a nice flavor to sausages. Useable in soups and stews. Anise Seeds are delicious in homemade bread and Italian Biscotti.
